Zucchini Cake/Cupcakes
Cream:
1 Stick Butter
2 Eggs
¾ Cup Brown Sugar
½ Cup White Sugar
Add:
1 Cup Water
2 Cups Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Salt
2 Cups Zucchini
½ Cup Butterscotch Chips
½ Cup Walnuts
Topping:
½ cup Butterscotch Chips
½ cup Walnuts
½ cup Brown Sugar
Grease and flour pan for cake.
Bake 350 - 40 minutes for cake, 25 minutes for cupcakes.
Cream Cheese Frosting:
6 Tbsp. Butter (Room Temp)
8 oz. Cream Cheese (Room Temp)
1 tsp. Vanilla
2 Cups Powdered Sugar
