Lemon Bars
Crust:
2 Cups Flour
1 Cup Butter
½ Cup Powdered Sugar
Mix until incorporated, roll into balls and place in a buttered 9x13 pan.
Spread out, bringing crust up edges of pan.
Bake 350 degrees for 20 minutes.
Filling:
4 Eggs
2 Cups Sugar
5 Tbsp Lemon Juice (2 lemons in enough)
1 Tsp Lemon Zest
½ Tsp salt
1 Tsp Baking Powder
Beat eggs and sugar for 1 minute, add rest of ingredients. Pour onto crust.
Bake for 25 minutes 350 degrees, it will puff up a little but when taken out of oven it will sink back down.
You can top with whipped cream, I used about 1 cup cream Tbsp Powdered Sugar,Tsp of Lemon Zest and Tsp of Lime Zest for a little zing. You can also sprinkle some over top, It looks really pretty.
