Caramels

1 ½ Cup Heavy Cream
2/3 Cup Light Brown Sugar
1 Cup Sugar
1/3 Cup Light corn Syrup
1 ½ tsp. Kosher salt
1 ½ tsp. Vanilla
1 Tbsp. Butter

Mix cream, corn syrup and sugars, bring to a boil on medium heat.  Boil until mixture reaches 250 degrees.  This will produce a soft caramel.

As it is cooking, swirl the pan like 4 times don’t stir it.

Remove from heat and add vanilla, butter and salt.

Transfer into a buttered tin foil or parchment paper lined 8x8 pan.

Let cool 2-3 hours,  cut and wrap in wax paper.

Great for a gift and just to eat.
