Tomato Pie

Tomato Pie

It doesn't sound as delicious as it tastes. Very savory!!


28 oz Tomatoes, (Diced)
If you use whole tomatoes crush 
2 Thick slices of Sour Dough Bread
or any bread you love.
2 Cloves Garlic
1/2 Medium Onion
1 Tsp Chili Powder
1/2 Tsp Oregano
1/2 Pound Cudighi or Italian Sausage
1/2 Cup Parmesan Cheese
2 Egg Whites
1/2 Tsp Salt


Drain your tomatoes and soak bread in the juice.

Sautee onions and garlic until tender in pan.

Mix tomatoes with chili powder, onions and garlic, oregano,
cudighi, add bread.

Whip the two egg whites to soft peaks and fold into tomatoes. Mix.

In a 9" pie dish, layer half of the mixture, then half of the Parmesan,
remaining  tomatoes then top with remaining Parmesan.Then take one more
slice of bread and rip into pieces. Partly insert the bread into the top of the mixture. Half of the bread should be visible.This will be nice and toasted and is the bomb!!!!

I serve this with a basic lettuce salad.    Yum!
