Rhubarb Date Crumble Bars


2 ½  Cups Oats
2 Cups Flour
1 Cup Brown Sugar
1 Cup Butter
1 Tsp. Baking Soda
½ Tsp. Salt

Mix above ingredients,  spread and press into a 9x13 greased pan. 

Leave 1 ¾ cups for top.



2 pounds Dates
5-6 Cups Rhubarb

Take your dates and put into sauce pan, add about 1 ½ cups water and heat through.

For the Rhubarb, 4 cups cut into pieces and put into medium sauce pan and add: ½ Cup Honey or Sugar and Pinch of salt.

Simmer until Rhubarb is soft and it is thickened.

Spread dates on crust first, take raw rhubarb and sprinkle over

Dates, add your cooked rhubarb and sprinkle topping on top.


Bake 350 degrees for 40-45 minutes
